How Do I Uninstall An Application From The SGH-i897 (Captivate) Device?
In order to remove a single application, follow the steps below:
Note: The uninstall behavior may vary slightly from application to application. In addition, applications that are preloaded may not be removed.

Tap on Settings

Tap on Applications

Tap on Manage applications

Tap on the desired application destined for removal

I guess you can't un install the At&t programs without rooting it?

Not without rooting, no.
