I've been lightly reading about "rooting" but still don't fully understand what it does. In Lamen's terms, what is rooting, and why.

Root basically gives you full control of your phone. Root allows you change system files. Like being admin in a windows machine as opposed to being a guest.
Root has many advantages, being able to install custom ROMS/themes and also will allow you to overclock and undervolt which is all beneficial.
I rooted my Droid X mainly to be able to flash custom ROMS and install themes.
Better performance, better stabilty and better battery life.

check out this thread To Root Or Not to Root?

Did you back up using Titanium Backup? Do you currently have a backup of your stock setup?

Please don't cross-post. I told you in the other thread to flash the app pack. Otherwise you can't use the Market or gets your apps back.
