I was wondering the same thing about this method.
Perhaps a guide on returning to stock is in order if possible.

YES you can revert to stock when you want.
You just have to nandroid backup your current rom to save it. When you want to revert, just flash your backup.
To revert to stock with root
Before installing custom rom make sure you backup your current (aka stock) rom
Instructions for backing up with clockwork (after rooting of course)
1) Go to RomManager
2) Select Backup Current ROM
3) name it (ie. stock with root)
4) Your phone will reboot in recovery mode and start the backup
5) Wait for the backup to finish
6) It will reboot again and you will have the backup here /sdcard/clockworkmod/backup/(name-of-the-backup)
Instructions to flash the backup with ClockworkMod
1) Open RomManager
2) Select Manage and Restore Backups
3) Select your backup (must be placed in /sdcard/clockworkmod/backup/(name-of-your-backup)
4) Select Restore
5) Wait for reboot and flash process
6) Now you have your stock rom with root
Recovery: ClockworkMod 3.0.0.5
ROM: CyanogenMod 7.0.0 RC2

Just flash this rom. Its a 100% stock rom of 2.2.1 frg83 rooted.
FRG83_stock.zip - 4shared.com - online file sharing and storage - download
it worked for me.

I understand how to flash a Stock Rom. I guess what I was wondering if there was a way to Revert back to the Stock Recovery.

Ok, but if you reflash the Stock Rom, do you get back stock recovery
or does that have to be flashed separately ?
Edit : i think it does get back as u are doing a Nandroid, so u get back
a complete copy / image of your phone as it was ,, right ??

No the stock recovery does but return when flashing a stock Rom. You flashed the custom recovery over the stock one before you did a nandroid backup. So no way it could back it up.
Anyone ever seen a zip of the stock recovery that can be flashed?
