Quick question, what should I wipe?

Data/factory reset (already did this one)
    cache
    dalvik-cache
SD:ext partition (will this wipe my whole SD card? I haven't partitioned it from its stock form)
    Battery Stats
    Rotate settings

Final question: while in this recovery mode after flashing CM and Gapps, should I select backup/restore to restore my nandroid backup, or is this done automatically?

If I remember correctly, a Nandroid restore is used if there is a problem and you want to get it back to where it was. I flashed the new ROM, and then did a nandroid restore, and I was back to my original rom.

It is contained within your google account, so when you sign in to google and facebook and whatnot you will get all your stuff back. Your text messages, however, are gone forever.

There are a bunch of apps that will back up ALL information.

    Texts, app data, MMS, etc.

Wavesecure uploads the texts to their data servers, and others will send copies to your email or save to SD card.

    MyBackUpPro also.

Desire ROM is legit. out of the 2 days i played with it, it didnt FC on me once. it was a little buggy, like when i send a text to someone it would show that i sent it before the last text i received from the person...if that makes Sense (UI, lol). but all the widgets were really cool, way better than Google. its definately no where near as stable as Cyanogen. but i would recommend it to play around with. get the donate version of Titanium Backup, make a nandroid backup and flash it...its stable enough to mess with for a day. what else...it kills the battery a little quicker than Cyanogen. the flash on the camera still isnt timed right, and the footprints app still doesnt work even though MoDaCo said it was fixed...but i am going to make it my primary ROM once it is stable. i say DO IT!

when you make a nandroid backup all your texts and settings and homescreens are saved up to the point of the backup. when you restore it, youll have the same stuff from the day you backed it up.
