Manually select (and stick to) a mobile network

I manually chose my mobile network, but went to the cinema yesterday and it got no signal from that network, so the Nexus switched to a nearby network. Then I got out of the cinema and then the phone wasn't working because of the invalid network.

I had to manually set it back to the right (my carrier) network

How can I fix this so the Nexus doesn't change the network even though it loses signal?

Because then it selects AUTOMATICALLY and the same problem occurs.

I'm no expert, but it sounds to me like you've got a SIM card problem. Your phone shouldn't choose between different carriers. Select automatically should automatically select the network that works. And your SIM card should tell your phone which network to use.

You can always manually change your network in any phone. But the problem with the Nexus One is changing to the next network nearby if your MAIN network loses signal.
