Did you change your sign-in account before composing?

This is the setup I have fot my Hotmail. Unfortunately what you want can't be done since there's no "Send As" feature for newly composed email. Your options (as you've already discovered) are

    1) Compose and send new email from a Gmail account only
    2) reply as me@myotheraccount.com, if the email sent to me@myotheraccount.com

You need to add your me@myotheraccount.com to the default Email app on the phone and use that instead of Gmail app.... which wasn't worth the hassle for me.
