Well I've just joined because I do refuse to root! You can hate me for it if you want but I've never seen the need to do it on my Nexus One. Having said that, I felt I had to on my HTC Hero to get the best out of it performance-wise.
Nothing is perfect, but we must not lose faith in perfection. If we did, everything would be a whole lot worse than it is now!

Just a few things you're missing out on:
Color trackball notification while the screen is still on. Very useful for me cause I hide my status bar. No more blink or gmail notifier to get what should had been on this phone from the jump. Gtalk Gvoice even other apps will flash and will show you all the colors in succession so you know what's waiting.
If you lock your phone you can add a note so if lost maybe someone will be willing to track you and return. Mines says 'you keep on knocking but you can't come in'
You can use the trackball to wake the phone up. No third party app needed once again. Also torch. This may seem pointless but it helps to free up memory not tieing down to extra apps.
Changing colors for your status bar to fit your color scheme.

I'm getting much better battery life. SetCPU is basically like giving my phone crack. Running at 1113mhz with the new kernel makes my phone run super smooth. Some apps that were choppy is a thing of the past. Especially White Noise.
It's really nice guys. Not ruining the thread, just letting you know I was very much the same way. Everyone was rooting to get Froyo I didn't care. But it was something about how simple one click made it that tickled my curiosity. I don't regret it at all and if I did I can go stock anytime bootloader still locked and be done.
Rooting has come a long way since the old way. Oh and my 3g speed?

Yea, unfortunately they are being hard-headed and not rooting =). I'm not sure why people don't. I mean, yes you will have the 'Original' Nexus.... but there's more capabilities that the Nexus One can do than you think.
I can see those who don't want to root because it used to void your warranty, but why not root AND keep your warranty? Personally, I don't need all the other features. I would root just for 720p HD capability.
They sure are missing out.
