One thing you will soon understand is that clockworkmod is not a custom rom. It is a file that you use to flash roms, create nandroid backups, and stuff like that. Its very simple.

I've tried CWM 3.x twice. Both times it blew out my ext partition, forcing me to format my SD to recover. I've heard many similar stories, including people losing their system partition, and having to fastboot it back...

Nope. A custom rom will though! Did you install 2.5.1.4?

Recovery is like the recovery mode for Windows on a PC. It's a very simple alternative interface for your phone, which you use to make changes to the system. The stock recovery will only let you install official updates from Google. A custom recovery has a lot more options, including backing up and restoring the system, our installing modified OS's...

If you plan on tinkering with your phone, I would absolutely recommend a custom recovery, if only for the backup ability...

That means that ROM manager is not allowed by super user go look for super user in your app drawer and see if it has ROM manager in it listed under denied.

Use the Fix Permissions option, and you may also want to install Titanium Backup and use the "Problems" option to install a compatible busybox version.

Then try again with the recovery...
