    Do you like your steak well-seasoned or do you like it fiery- hot? I have three basic recipes to meet all your beef-devouring carnivorous needs.

    My personal favorite anymore is also the simplest -- and if you throw some soaked hickory chunks (going to try mesquite this summer -- oak is wonderful, as is apple...) on the coals for a nice level of smoke flavor too, it's to die for. :D

    Unlike some of my friends, I don't smoke cigs...which is to say I love subtle flavors and minimal salt. When I do want to add some smoke flavoring, I use the tiniest piece of hickory or mesquite directly on the coals and get the effect I want. So a simple rub to start, but I'd love to have all three, and I can adjust to taste. :D
