    Nah. Actually, there isn't too much salt absorbed into the meat doing it this way -- it's mostly water; the salt acts as a polarizing molecule to "stretch" the meat fibers to the water can penetrate. Yes, some salt and some sugar gets absorbed, but it's less than you'd think. It also helps the meat to retain moisture when cooked.

    It's a real treat on modern pork which, usually, ends up having the texture of a boiled penny loafer. And with pork the brown sugar is good because the molasses adds a nice flavor to boot.

    It's too much, when you have to stay around 2,000mgs a day.

    1/4 teaspoon of coarse sea salt has 480mgs of sodium, way more in regular salt.

    Congestive heart failure, before I was even 40, so I watch my sodium intake very closely. Just not an experience I want to repeat.

    It still adds too much. If 1/4 teaspoon is absorbed, that's my sodium for that meal, so no side dishes or anything.

    Understandable. I've been on BP meds for 15 years and I'm turning 31 Friday. I've learned to judge when I've had too much salt by how I'm feeling -- but luckily for me the meds tend to mitigate any major spikes because I can't always prep my own food.

    Lucky you. That's stroke weather, that is.

    And I'm glad you didn't get the *%@#^ I got the last time I was in. I come in complaining of an inability to talk, stand, hold things, etc, and massive involuntary muscle movements. So she sends me home three hours later without deigning to let me eat some of what they laughingly call food with a script for Ambien.

    Ambien is a hypnotic and has some scary side effects, including sleepwalking, having sex while asleep, driving a car while asleep, hallucinations, etc. etc. If you'd walked in with numbers like that she'd probably give you a diuretic and a pamphlet on eating a low-sodium diet and sent you home to die. (See how I managed to somehow get it back on topic? :D)

    Oh, and I'm not Alton Brown, I just like science. :D

    Yes, I'm very lucky that I just got the fluid retention and caught it in time.

    That's insane! I'd have freaked on the women.

    And prescription drugs are my job, so I know all about those fun ones. LOL

    Anyway, I made Tilapia, tonight, with a rice side dish.
