If you continue to use the Touchwiz home app everything will stay the same. The rooting process is non-destructive so you don't loose any of your desktop layouts, settings or apps.

    What does rooting actually do?
rooting provides unrestricted access to the normally locked down portions of your phone. Like the folder with the ATT apps in it, or the ability to upgrade to a customized recovery.

once i root my phone what apps are a must to get? like titanium backup ect..
Titanium Backup, root explorer, rom manager, and possibly ninjamorph and metamorph

Will i be able to update my phone to 2.2? or have to wait till samsung does the update for it? and if i use the samsung update feature will that unroot my phone?
You can update it, but the release is unstable. We don't have a 2.2 kernel for our captivates so it isn't worth it yet. If you do install the samsung official update it will unroot, and you might not be able to re-attain root if the update patches the method. Shortly after the update, I am sure there will be a custom package based of the official OTA update.zip that will be rooted and free of the ATT bloatware

will rooting my phone allow me to use sim cards from other carriers?
Not afaik. A sim unlock is a permanent process. I believe you will have to obtain an unlock code from ATT or a 3rd party to do so. I am not 100% that flashing the i9000 software will allow unrestricted sim access though.

    One click rooting

Found and used this app to root my Captivate: How To: Root And Unroot Samsung Galaxy S i9000 With A Single Click

It has root or unroot options so if you want to revert, its easily doable.

Look in the App Menu for "Superuser Permissions".
