Hey glad to have you around. The most popular use of the Xperia Play is of course games. Check out some of the subsection for a list of games designed for the Xperia Play (any Android game will work but might not have configured controls for the phone). Another popular use is of course Emulation. There's a whole thread dedicated to some of the best emulators for NES, SNES, and Genesis. There's even a PSOne and N64 emulator that run decent enough to warrant checking out.

As for custom themes, those can be downloaded from the market without issues, no need to root the phone for those. They are normally called launchers and they replace the main theme of the phone to make the phone look different. Google is your best friend to find these; here's a link to a review of some of them: Android launcher showdown: LauncherPro, ADW, Zeam, GO Launcher and QuickDesk

Then you get down to the hardcore which involves rooting and replacing the ROM with a custom built ROM. This will in effect have the most significant change on the phone and will often make the phone feel completely different. It does void your warranty though and is very involved, so unless you are planning on doing a lot of research I recommend staying away from it for now. Most common users (especially users who are used to not having complete control over a phone.....aka iPhone users) don't have a need for that much control. If you're coming from an iPhone 4 you'll have plenty of choice without having to root, so only plan on doing that after you've had some solid time with your phone.
